Rings of Bull Kelp before pickling

A Southeast Alaskan Tradition.
Bull kelp is the fastest growing seaweed in the world. It can actually grow two feet in a single day reaching lengeths of 100 feet. The long hollow stipes are havested, cut in 1/4 inch segments and pickled.

Recipe for pickling:
2 quarts vinegar
1 quart water
2/3 cup pickling salt
1/4 teaspoon dill weed
1 clove
1/4 teaspoon garlic salt
Combine ingredients. Heat to boiling. Pour over one quart kelp. Pour kelp into sterilized jars. Allow one week for kelp to pickle.
I add onions and tomatoes for color. I make this every year and put in 1/2 pint jars and give them to our guests that visit our Island.
